Only using triads

I am new to music theory. But I've heard that no matter how complex a chord or chord progression is it can always be reduced down and played with the triads (apparently you can do that with complex jazz songs). If that's the case then can't I just only use triads to compose? Is that good enough? Do extra notes really make a significant difference in terms of leading me down a new road and inspiring me?

... What I basically do when I sit down to compose (always on the piano) I always have my 3 fingers in the same triad shape, and I just move that around while I hit notes with my right hand trying to create melodies (In c major, since it's the only key I stick to)... It seems to work for now, I've come up with decent sounding stuff, but I get the feeling that there is alot I'm missing but the method I use is decent so I don't really attempt to learn further

Also, whenever I play other artist's songs on the piano I only use triads. For example, when I'm playing some Beatles songs I just play the most simplest version of the song with the basic triads and it sounds alright... So I figure that if The Beatles songs sound good that way then maybe It won't be that bad if I just use triads for my music.
